I got an incredible surprise this past weekend. I want to recommend it to everybody I know who reads but I know that wouldn't be a good idea. Last weekend we bought the most amazing 5 yr aged miso and so I had to put it to good use and make two big batches of miso soup! I cannot believe I have just recently eaten sea lettuce in Japanese aosa,for the first time. I love starting my meal in Japanese restaurants with a simple bowl of hot miso soup. It has been in the high 70's down to the 40's with either rain or shine. The eggplant and Chinese broccoli can be replaced by other vegetables that you prefer. My review: In the Miso Soup is, without a doubt, one of the most interesting novels I've read this year. Tofu, miso paste, Kombu (a sea vegetable), and aged, dried bonito (fish) flakes, are items that I keep in the kitchen, because I love to make miso soup. Miso is an extremely healing fermented food commonly used in Japan and China. I had it in some miso soup at a restaurant and decided to buy some and try to make miso soup myself. Miso soup is one of my favorite soups. I don't know about you but the weather here in the Midwest has been really weird and confusing the last couple of weeks. This will make a nutritious and delicious stock for your soup and you can freeze the remaining for other soups or dishes. There is nothing more soothing or comforting to me on a chilly night than a warm bowl of miso soup. For today's lunch, we had vegetable dumplings in miso soup. The oyster mushrooms can be substituted with just about any kind of mushroom.
